This is one for the whole family to enjoy on those chillier nights and is great the next day as an easy work lunch.

Serves: 6-8
Ingredients
- 1 Tbsp olive oil
- 1 onion roughly chopped
- 2 garlic cloves roughly chopped
- 2-3kg Oakley's pumpkin roughly chopped
- 2 medium Oakley's Golden Gourmet potatoes cubed
- 4 cups chicken or vegetable stock
- 1 Tbsp honey
- 2 bay leaves
- Salt and pepper
Instructions
- Heat the oil in a large pot over medium heat
- Add the onion and stir until soft
- Turn the heat up to medium high and stir in the garlic, pumpkin and potatoes for 5 minutes
- Add stock, honey, bay leaves and season with salt and pepper before turning down to medium low heat and covering
- Leave to simmer away until all vegetables are sot and tender.
- Turn off heat and leave to cool before pouring into food processor
- Process until desired consistency is achieved
- Enjoy!
