Oakleys Golden Gourmet Chips and Kiwi Dip

Ingredients:

750g Oakleys Golden Gourmet potatoes, sliced 5mm thick

1/4 cup (60ml) olive oil

fresh chunk of Parmesan

2 stems rosemary, sprigs picked

 

Kiwi dip:

250g lite cream cheese (the lite has a better consistency for this!)

1 sachet French onion soup mix

Juice and zest of 1 lemon

2 tbps just boiled water

1 tbsp finely chopped dill or fennel fronds 

Instructions:

1. Preheat oven to 200•c fan forced. Grease and line a baking tray with baking paper.

2. Drizzle a prepared tray with half the oil and finely grate over with Parmesan to cover. (approx 20g). Scatter with rosemary. Arrange the sliced potato in a single layer. Drizzle with remaining oil and bake for 30 minutes or until golden brown.

3. Meanwhile, to make the kiwi dip combine all ingredients in a bowl and season to taste. Spoon into a serving bowl.

4. To serve, transfer chips to a plate and drizzle dip with any residual oil. Serve and get dipping.
