This one is for those lazy mornings when you have a bit of extra time to make a luscious and hearty breakfast. Whip up this Potato and Chorizo Breakkie Hash for a taste sensation!

1 large onion, diced

3 Tbsp extra virgin olive oil

2 cloves garlic, crushed

200g chorizo, diced

750g Oakley’s Classic Golden Gourmet Potatoes 

Italian parsley, to serve

4 eggs

Salt and pepper, to taste


  1. Preheat the oven to 180 degrees celsius fan bake.
  2. Dice the potatoes and boil in generously salted water for 12 minutes, or until just undercooked. Drain and leave to steam for 5 minutes.
  3. Heat the oil in an ovenproof pan. Saute the garlic and onion until fragrant. Add the chorizo and fry for 2 minutes. 
  4. Add the potatoes and cook for 5 minutes. Crack the eggs on top and transfer to the oven. 
  5. Bake for 10 minutes, or until the yolk is as runny as you like it.
  6. Season with salt and pepper. Serve with parsley and crusty bread.
