Slow Cooker Guinness Beef and Potato Stew

 

Ingredients:

1kg beef chunks, cut into 1-2 inch cubes (we suggest using a chuck, round, sirloin or oxtail cut)

1/4 cup all-purpose flour

2 tsp salt

1 tsp black pepper

2 Tbsp olive oil

2 yellow onions, chopped

4 cloves garlic, minced

4 cups beef broth

1 cup Guinness stout

1 Tbsp tomato paste

2 Tbsp Worcestershire sauce

750g Baby Golden Gourmet Potatoes, cut into 2 inch pieces

4 large carrots, peeled and cut into 2 inch pieces

2 stalks celery, chopped

2 bay leaves

2 tsp dried thyme

Chopped fresh parsley, for garnish (optional)

Instructions:

  1. In a large bowl, mix together the flour, salt, and black pepper. Add the beef cubes and toss to coat evenly.
  2. Heat the olive oil in a large frypan over medium heat. Add the beef cubes in batches and cook until browned on all sides, about 5-7 minutes per batch. Transfer the browned beef to a slow cooker.
  3. Add the onions and garlic to the skillet and cook until softened, about 3-5 minutes. Add the beef broth and Guinness, and stir to scrape up any browned bits from the bottom of the skillet. Stir in the tomato paste and Worcestershire sauce, and pour the mixture over the beef in the slow cooker.
  4. Add the potatoes, carrots, celery, bay leaves, and thyme to the slow cooker. Stir to combine.
  5. Cover the slow cooker and cook on low for 8 hours or on high for 4-5 hours, or until the beef and vegetables are tender. Discard the bay leaves.
  6. Serve the stew hot, garnished with chopped fresh parsley, if desired.
