Spice it up: Za’atar is a Middle Eastern spice blend, adding a unique, citrusy-herbal flavor to dishes. You can find it in specialty supermarkets, online stores (Farro, Pepper&Me, SpiceNEasy), your local spice shop, the international section of your local supermarket, or health food stores. If you’re at a pinch, try using a blend of dried thyme, oregano, and a pinch of sesame seeds in its place.

Zesty Za'atar and Pomegranate Celebration ‘Taties

Ingredients:

1kg box Oakley’s Petite Golden Gourmets
1 pomegranate
1.5C Greek yoghurt
1/3 cucumber (grated)
1 clove garlic (crushed)
1 1/2 tsp turmeric (dried)
1/2tsp salt
2tsp za’atar
Bunch of Italian flat-leaf parsley

Instructions:

1. Preheat oven to 190 degrees fan bake
2. Slice Oakley’s Golden Gourmets, roughly into 3 slices per potato.
3. Coat potatoes in oil, turmeric, and half of the zatar
4. Place into an oven tray and bake for 30-35 minutes until crispy
5. In the meantime, mix grated cucumber, yoghurt, and crushed garlic with a little salt and pepper. Spread this on the bottom of the serving dish.
6. Remove Oakley’s Golden Gourmets from the oven, and arrange on top of yoghurt sauce.
7. Top with remaining Zatar, pomegranate seeds, and parsley.
8. Enjoy!
