Ingredients:

  • 750 g Oakley Golden Gourmet baby potatoes

  • 20 mL olive oil

  • Salt and freshly ground black pepper

  • 125 g Brie (keep the rind on!), cut into small pieces

  • 100 g cranberry sauce

  • Toppings:

    • Fresh green herbs (parsley, thyme or chives), chopped

    • 20 g walnuts, roughly chopped

    • 15 mL honey

Instructions:

  1. Preheat the oven to 220 °C.

  2. Cook the potatoes: Pop the potatoes into a pot of salted water and boil until you can easily pierce them with a fork, about 15 minutes.

  3. Prep for roasting: Drain the potatoes and let them sit for a minute so they’re not too steamy. Place them on a baking tray, drizzle with olive oil, and sprinkle with a little salt and pepper.

  4. Smash the potatoes: Gently press each potato down with a fork or potato masher so it flattens a bit but stays in one piece.

  5. Roast: Roast in the oven for 20–25 minutes until the edges turn golden and crisp.

  6. Add the Brie: About 5 minutes before the potatoes are done, scatter the Brie pieces on top so it softens and melts slightly.

Top with cranberry and extras: Spoon cranberry sauce over each potato. Sprinkle over the fresh herbs and walnuts. Drizzle lightly with honey for a sweet finish.
