Golden Potato & Thyme Galette with Feta & Hot Honey Drizzle


Celebrate the shortest day of the year with something golden, warm, and irresistibly savoury. This rustic galette pairs buttery puff pastry with tender Baby Golden Gourmet potatoes, fragrant thyme, creamy feta, and a drizzle of hot honey for the perfect balance of comfort and zing.

From our fields to your plate, every Oakley’s potato is a celebration of flavour, heritage, and the power of real New Zealand produce.

Ingredients:

  • 500g Oakley’s Baby Golden Gourmets, thinly sliced
  • 1 sheet butter puff pastry, thawed
  • 2 tbsp olive oil
  • 2 tsp fresh thyme leaves (plus extra for garnish)
  • Salt & black pepper, to taste
  • 1/2 cup crumbled feta
  • 1 egg, beaten (for egg wash)
  • 1–2 tbsp hot honey

 

Instructions:

Preheat oven to 200°C (fan bake). Line a baking tray with baking paper.

Prep the potatoes

Toss thinly sliced Baby Golden Gourmets with olive oil, thyme, salt, and pepper.

Assemble the galette

Place puff pastry on the baking tray.

Layer the potatoes in overlapping circles, leaving a 3cm border.

Fold the pastry edges up and over the potatoes, pleating as needed.

Egg wash & bake

Brush the pastry border with egg wash.

Bake for 35–40 minutes, or until golden and crisp, and potatoes are tender.

While still warm, crumble feta over the top.

Drizzle with hot honey and sprinkle with a little extra thyme.

Serve warm and enjoy!
