Ingredients:

  • 800g Oakley’s Baby Golden Gourmets 
  • 3 tbsp butter 
  • 2 tbsp olive oil 
  • 3 cloves garlic, finely minced or grated 
  • 1/2 cup grated Parmesan 
  • Salt & black pepper, to taste 
  • Fresh thyme or parsley, finely chopped 
  • Chilli flakes, to taste
  • Lemon zest, from 1 lemon

Instructions:

  1. Boil the potatoes 
    • Add Baby Golden Gourmets to a pot of well-salted water. 
    • Bring to a boil and simmer for 15–20 minutes, until tender. 
    • Drain and let them steam dry for 2 minutes. 
  2. Smash the potatoes 
    • Preheat oven to 200°C (fan bake). 
    • Line a baking tray with paper or lightly grease. 
    • Place the potatoes on the tray and gently smash each one flat using the base of a glass or fork. 
  3. Make garlic butter 
    • In a small pan, melt butter with olive oil and garlic over low heat. 
    • Let it sizzle gently for 1–2 minutes. Remove from heat. 
  4. Brush & roast 
    • Brush the smashed potatoes generously with garlic butter. 
    • Season with salt and pepper. 
    • Roast for 20–25 minutes, or until crisp and golden. 
  5. Add Parmesan 
    • Sprinkle Parmesan over each potato. 
    • Return to oven for 5–10 minutes, until cheese is melted and lightly golden. 
  6. Finish & serve 
    • Top with a light sprinkle of chilli flakes and fresh lemon zest. 
    • Garnish with chopped fresh herbs. 
    • Serve hot, straight from the tray.
