Ingredients:

  • 600 g Baby Golden Gourmet potatoes, diced
  • 7 large eggs
  • ⅔ cup cream
  • ¾ cup grated cheddar or edam cheese
  • 1 small white onion, finely chopped
  • 1 clove garlic, crushed
  • 2 Tbsp fresh herbs (such as parsley, chives, or thyme), chopped
  • Salt and pepper, to taste
  • Olive oil or butter, for greasing

Optional: diced ham, bacon, or leftover roast vegetables

Instructions:

  • Preheat the oven to 180 °C. Lightly grease a 6-cup muffin tin (or a 12-cup tin for smaller portions) with olive oil or butter.
  • Cook the potatoes: Place the diced Baby Golden Gourmets into a pot of boiling water and cook for about 7 minutes, until just tender. Drain well and set aside to cool slightly.
  • Sauté the aromatics: Warm a teaspoon of olive oil in a small pan. Add the onion and garlic, cooking gently until soft and fragrant.
  • Make the filling: In a large bowl, whisk together the eggs, cream, salt, pepper, and herbs. Fold through the potatoes, onion mixture, cheese, and any extras like ham, bacon, or roasted veg.
  • Fill and bake: Divide the mixture evenly between the muffin cups. Bake for 20–25 minutes, until the quiches are puffed, set, and golden on top.
  • Cool and enjoy: Leave to cool in the tin for a few minutes before lifting out. Serve warm, or let them cool completely for easy snacks, lunchboxes, or breakfast on the go.
