Stuffed Baby Golden Gourmet Potatoes

Ingredients:

  • 1.5 kg Oakley’s Classic Baby Golden Gourmet Potatoes

  • 2 cups grated cheese (Cheddar, Mozzarella, or your favourite)

  • 1 cup cooked bacon bits or diced ham (optional)

  • 1 cup sour cream or Greek yogurt

  • 4 spring onions, finely sliced

  • 1 cup corn kernels (fresh, frozen, or canned)

  • Salt and pepper to taste

  • Olive oil

Optional toppings:

  • Diced tomatoes

  • Sweet corn

  • Olives (sliced)

  • Cooked peas

  • Mini pepperoni slices

  • Chopped fresh herbs (parsley, chives)

Instructions:

Prep and Bake the Potatoes. Preheat oven to 200°C (fan bake). Wash potatoes and pat dry. Toss with olive oil, salt, and pepper. Place on a baking tray and bake for 35-40 minutes until tender and the skins are crisp.

Scoop and Stuff. Let potatoes cool slightly so they’re easy to handle. Slice each potato in half lengthwise. Using a small spoon, scoop out most of the inside, leaving a thin shell of potato. Put the scooped potato flesh in a large bowl.

Mix the Filling. Mash the scooped potato with sour cream, half the cheese, bacon bits (if using), spring onions, and corn. Season with salt and pepper. Mix until combined.

Fill and Top. Spoon the filling back into the potato shells. Sprinkle the remaining cheese on top and add any optional toppings you like.

Bake Again. Return to the oven for 10-15 minutes, until the cheese is melted and golden.
