Golden Gourmet Broccoli & Potato Gratin

Ingredients:

  • 750 g Oakley’s Classic Golden Gourmet potatoes, thinly sliced 
  • 200 g broccoli florets (fresh or thawed frozen) 
  • 55 g unsalted butter 
  • 50 g plain flour 
  • 500 ml milk 
  • 1 tsp salt 
  • A pinch of nutmeg (optional) 
  • 60 g grated mozzarella 
  • 25 g + 40 g grated Parmesan (total 65 g) 
  • Freshly ground black pepper 
  • 3 tbsp olive oil

Instructions:

  1. Prep the Veggies 
    • Parboil sliced potatoes in salted water for ~10 mins until just tender. Drain. 
    • Boil fresh broccoli for ~8 mins until soft enough to pierce; or thaw frozen broccoli and chop. 
  2. Make the Béchamel Sauce 
    • Melt butter over low heat. Stir in flour to form a roux. 
    • Gradually whisk in milk, salt, and nutmeg. Stir for ~7 mins until thickened . 
    • Remove from heat, then stir through half the mozzarella and 25 g Parmesan until melted. 
  3. Layer the Gratin 
    • Preheat oven to 200 °C (fan bake). 
    • Grease a baking dish. Spread a few spoonfuls of béchamel, then layer potatoes and broccoli. 
    • Sprinkle mozzarella, Parmesan, and black pepper. Stir and repeat layers, finishing with sauce and cheese. 
    • Drizzle olive oil over the top 
  4. Bake 
    • Cover dish with foil. Bake for 45 mins until veggies are tender (check with a skewer). 
    • Remove foil and bake for a further 8 mins to brown the top 
  5. Rest & Serve 
    • Let stand for ~5 mins to set, then serve warm.
